Based on a talk by fresh03 on a live stream, he said that a pineapple uoside down cake is hard to nail down because there isn‘t a cooked pineapple flavour on the market. I found solube arome tarte tain to have this cooked flavor and with the help of flavor monks pineapple (has the least amount of candy taste) it seems to work fine. I pushed the cake note with the help of rf deep fried sponge cake and i am happy with it
